The Muscadine, or Vitis rotundifolia, is probably the least developed and most underutilized of the native North American grapes. It grows wild from southern Delaware west along the Gulf Coast to southern Missouri, Kansas, Texas and into Mexico. On river banks, swamps, and woodlands, the wild vines often climb 75 to 100 feet over bushes and into trees. Individual berries range in color from silver-white to a blue so dark it appears black, with all variations in-between. Jellies made from the juice of the muscadine grapes are extraordinarily aromatic and pleasing to the taste. The Food Science Club members at Mississippi State University have prepared this jelly from cultivars of muscadine grapes, sometimes referred to as Southern Grape, Bullace, Bullit, or the Bull Grape. |
